  2. I made these muffins today for my meal prep for the week. I do not eat any flour so I substituted in a 1/4 cup of oatmeal and 1/4 cup of shredded, unsweetened coconut instead of the coconut flour. The muffins turned out great and are delicious. I baked them in mini muffins so they are bite size, I am looking forward to my morning snacks this week!

      Yes, a serving would be one muffin. You could have one as a snack or as part of your breakfast–they are quite versatile!

      Almond flour and coconut flour are not interchangeable. Coconut flour creates a fluffier baked good, while almond flour is more dense. There are some great resources that you can find on Google if you want more information! -Moriah, Team 21DSD
