Avocados are an excellent source of healthy omega 3 fats and a wide range of phytonutrients. The avocado is likely to provide you with health benefits in the areas of blood sugar control, insulin regulation, satiety and weight management, and decreased overall risk of unwanted inflammation. I like simple recipes that don’t take much time or effort, and this recipe is super-fast and easy in addition to being incredibly nutritious! The collagen peptides provide a clean source of amino acids which complement this fiber rich and nutrient-packed summer soup.
Avocado Gazpacho

PREP TIME: 5 minutes

ingredients
- ½ cucumber, diced
- 1 ripe avocado, pitted and peeled
- 1 cup full-fat unsweetened (plain) coconut or almond milk yogurt
- ¼ cup fresh mint, minced (or 2-4 whole sprigs)
- ¼ cup fresh basil, minced (or 2-4 whole leaves)
- 1 small handful fresh spinach
- 2 Tbsp. raw tahini
- 1 Tbsp. lemon juice
- 1-2 scoops collagen peptides (optional)
- salt & pepper to taste (optional)
- filtered water (1/2 cup or more as needed to blend)
preparation
Simply add all ingredients into a blender and blend on high speed into a smooth, thick, creamy soup. Add some filtered water and additional cucumber if needed for more liquid. Place in the refrigerator for 1 or more hours to chill before serving. Top with white chia seeds, bee pollen or raw shelled hemp seeds for an additional superfood punch!
