This quick and easy breakfast hash will keep you satisfied until lunch. It's also a snap to make extra so you can feed a large family or have leftovers all week long!
Carrot-Apple Skillet Hash

COOK TIME: 25-30 minutes

ingredients:
- 4 slices bacon, chopped
- 4 carrots, peeled (2 cups shredded)
- 1 green apple, peeled (1 cup shredded
- 1 pound ground chicken, turkey, or pork
- 1 to 2 tablespoons Italian Sausage Spice Blend (or page 208 in the 21DSD guidebook)
- sea salt and black pepper to taste
preparation:
In a large sauté pan or skillet over medium heat, cook the bacon for 8 to 10 minutes, stirring occasionally, until the fat has rendered off and the meat becomes crispy. While the bacon cooks, shred the carrots and green apple.
Once the bacon has cooked, add the chicken to the pan and season with 1 tablespoon of the Spice Blend, breaking up the meat with a heat-safe spatula or wooden spoon. Allow it to cook, stirring occasionally, for about 8 minutes or until the meat is cooked through (there should be no pink remaining). Taste and add more Spice Blend and salt and pepper if desired.
Reduce the heat to medium-low and add the carrots and apple to the pan. Stir to combine, cover, and cook until the carrots are tender, about 5 minutes. Remove the lid and allow any liquid to evaporate out of the pan before serving.
Use shredded sweet potatoes instead of carrots.
