I love lemon! It’s tart, it’s bright, it’s packed with vitamin C, and it works well in sweet and savory dishes alike. It is my go to for a quick salad dressing–just a squeeze of lemon and some olive oil and I’m set. I love it sliced over broiled salmon, and it’s great in my Tart & Creamy Applesauce or Sweet & Sour Gummies.
The bright lemony flavor is one reason why these meltaways are one of my absolute favorite treats. The other reason is that they are just so darn good! When I want a little snack or a taste of something just slightly sweet, I often whip up a batch of these delightful goodies. I love how the tart lemon blends so well with the creamy coconut and vanilla. And they are so easy to make!
I love the convenience of making a batch in a few minutes and then being able to pop one (or a few!) in my mouth when I want a treat.
And the best part? These bite-sized treats are good for you! The coconut gives you a nice hit of healthy fat plus the vitamin C from the lemon. Totally satisfying and so yummy.
Easy Recipe: Lemon Vanilla Meltaways

ingredients:
- 1/2 cup coconut butter, softened
- 1/2 cup coconut oil, softened
- Seeds from 1/2 vanilla bean pod
- Zest and juice of 1 lemon
preparation:
Line 12 cups of a mini-muffin tin with mini parchment paper liners. In a mixing bowl (preferably one with a spout like this one), whisk together the coconut butter, coconut oil, vanilla bean seeds, lemon zest, and lemon juice until well combined. Pour the mixture into the prepared muffin tin and chill for 20 to 30 minutes or until completely solid. Serve 3 pieces per person.

Can you somehow sub vanilla extract instead of the beans?
And any subs for the coconut butter? I really really do NOT enjoy the flavor of coconut and so many newer healthy recipes are calling for it – Not sure what to do to replace the coconut products…
Can you please tell me the nutritional values?
