Mint Keto Cups
grain-free • gluten-free • sugar-free
PREP TIME: 2 minutes of prep; 1 hour or more to set in freezer
SERVINGS: 8 mini keto cups
ingredients
- 1/4 cup (15g) raw cocoa butter
- 1/8 cup raw coconut butter
- 1/8 cup coconut oil
- 1/8 cup MCT oil
- 1 scoop collagen peptides
- 4 drops mint extract
preparation
Add cocoa butter, coconut butter and coconut oil to a small bowl. Microwave on medium for 20 seconds until melted or melt in a small saucepan over low heat. Add MCT oil, collagen peptides, and mint extract, and mix until combined. Pour into mini muffin tins lined with mini muffin cup liners. Place in freezer and chill until firm, about one hour. Remove cups from tin and store in freezer or refrigerator until ready to eat.
