COOK TIME: 8-12 minutes
SERVINGS: 4
ingredients:
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1 teaspoon chopped fresh dill
- 1 clove garlic, minced
- zest of 1 lemon (optional)
- 1 1/2 pounds ground lamb
for the avo-ziki
- 2 ripe avocados, mashed with a fork
- 1/2 cup grated cucumber
- 1 teaspoon chopped fresh dill
- 2 cloves garlic, minced
- juice of 2 lemons
- 2 tablespoons extra-virgin olive oil
- sea salt and black pepper to taste
for serving
- 1/2 head iceberg lettuce, separated into leaves
- 4 large tomato slices (optional, omit for nightshade-free)
- 8 slices cucumber
- 8 thin slices red onion
preparation:
Make the burgers: Preheat a grill or grill pan to medium-high heat. In a mixing bowl, combine the salt, pepper, oregano, dill, garlic, and lemon zest, if using. Add the meat and mix with your hands until well incorporated. Form the mixture into 4 patties, then grill for 4 to 5 minutes per side (depending on thickness) to your desired level of doneness.
Make the avo-ziki: Combine all the ingredients in a small mixing bowl.
Serve the burgers in lettuce wraps topped with tomato, cucumber, onion slices, and avo-ziki.
Do not use the optional tomato slices.
